Personally, if I was able to, I'd sell my Miata (my daily) in half a heartbeat to get a bike. I'm sure you know the differences between bikes and cars (freedom, safety, cargo, etc, so I won't go in to all that. The exception is on the freedom - a miata is the closest thing you'll get to a bike on four wheels when it comes to freedom and fun.

NA6 can take boost like a champ. NA8 makes more torque, can still take boost just fine. Up to 95 they're easier to tune. After that they're easier to diagnose. 01+ has VVT, which is more low end torque, but a little harder to tune, and less happy with boost (not that it can't be done, just not quite as much).The handling dynamics will be much different on a Jetta (FWD, front-weighted) compared to a Miata (RWD, even-weighted), but it's still good practice. BTW the ND1 (2014 - 2017) and ND2 (2018+) engine power and torque curves are almost identical - reworking the internals only provided extra RPM and power at the top end.
